賀年菜 蜜餞金蠔 蜜汁煎蠔豉(3-5人份) - On Hing Dry Seafood


在家煮賀年菜 親友聚會宴客大方得體

材料:日本蠔豉(LL)250G、薑6-8片、薑米適量、蔥2扎、料酒2湯匙、豉油1湯匙、蜜糖2茶匙

做法:

1 將蠔豉浸4小時以上(也可以放雪櫃浸過夜),浸泡的水會變白,輕輕檢查及清洗蠔豉邊內翻的位置

2 取出蠔豉掠/ 抹乾,倒入料酒及豉油輕輕拌勻,醃30分鐘;蔥花取出掠乾水份備用

3 將蠔豉放入碗中,放上薑3片及蔥1扎,隔水蒸40分鐘取出,蠔豉印乾,蠔汁留起備用

4 在鍋中放入2湯匙油,放入薑片、薑米(用薑米更出薑味)及蔥煸至蔥焦香,將薑蔥全部撈出,放入蠔豉,加入蠔汁,每面煎1-1.5分鐘,煎至有些焦香金黃,翻另一面再煎1-1.5分鐘,加入蜜糖,再輕輕翻炒

5 夾起蠔豉,加入少量水將蜜餞金蠔汁煮出備用於菜式/ 其他菜式;擺碟,放上蔥花即可食用 配著蔥花的爽脆口味,特別好吃!

*日本蠔豉基本上很乾淨,也沒有什麼沙粒 如果鍋夠大可以一次過蒸,小編的鍋比較小,分兩次蒸
